Background

The Stronger Together Café on Clay Kaserne provides quality food services that support the warfighter with flexible, efficient, and cost-effective service.

The Restaurant Manager is responsible for managing the day-to-day operations of the Warrior Restaurant; order and receiving, menu creation, account management, equipment accountability and maintenance, attending Food Service Menu Board Meetings, cash turn-in procedures, and other associated tasks.

Qualifications

Professional Experience

  • Must have a minimum of two years of experience as an assistant manager, or manager, of a United States Army DFAC or at least eight years of progressive management, or assistant management, experience working in a food service operation providing complete meal service (breakfast, lunch, and dinner) in either a cafeteria-style or multi-entree operation, setting

  • Must have two years of experience using Army Automated Food Management Systems (AFMIS) within the past five years

  • Have a current Food Protection Manager certification as defined in Tri-Service Food Code TB Med 530 para 2-102.20

Language Requirement

  • Read, understand, speak, and write English fluently. Must have English language proficiency equal to Level 3 as defined by the AEP 690-70, Appendix H

Skills, Knowledge & Abilities

  • Able to communicate effectively on complex matters and compose correspondence and other written communications about the work for which they are responsible

Responsibilities Include but are not limited to:

  • Plan 21-day cyclic, nutritious meal plans

  • Responsible for requisitioning, receiving, inspecting, storing, issuing, and accounting for Subsistence

  • Order menu items within the required lead time schedules

  • Immediately off-load, receive, store, inspect, and maintain accountability of all perishable and semi-perishable subsistence upon delivery

  • Issue and account for subsistence to support the safeguarding of perishable and semi-perishable foods

  • Perform inventory management

  • Ensure the total dollar value of the monthly inventory (perishable and semi-perishable) will not exceed the total dollar value of the restaurant’s earnings for a 6-day average period

  • Conduct equipment operating, cleaning, and maintenance training

  • Prepare, maintain, and properly fill out production schedules

  • Attend training and meetings with US Government representatives
