Summary About the position: This position will be assigned to the 30 FSS/Community Services Flight Collocated Club . Responsibilities Responsible for the planning and handling of all food activities for a small to medium size kitchen. Using culinary skills, performs duties as a working "Sous" chef in the day-to-day operation of the kitchen and all aspects of meal preparation. In the absence of the Chef, instructs cooks and food service workers on proper techniques and methods of food handling, cooking, and the preparation of a variety of food items in the art of fine culinary cuisine. Checks food during and after preparation for conformance with high standard of quality. Assists the Chef with menu planning for regular meals, fine dining and parties, formulates cyclic meal specials and menus for use in all food areas to ensure customer satisfaction. Ensures current menu cost cards on all menu food items and the utilization of standardized recipes. In the absence of the Chef, may be responsible for the security and accuracy of monthly inventories of supplies and foods; and if necessary, may carry over the general supervision of the kitchen staff. In addition, the incumbent in this position may be responsible for completing routine walk through inspections, taking any necessary actions to meet all objectives for sanitation and environment requirements. In addition, the incumbent should have knowledge of dietetics, planning culinary activities, and portion control. Must be able to obtain a Food Handler's Certificate, and Serv Safe Certificate. Must be able to satisfactorily complete a pre-employment physical examination. This is a position of trust. Must satisfactorily complete a Tier 1 background investigation. Education Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution. FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements.
