The dietary aide assists in the kitchen area prior to, during, and after meals are served to the residents/patient; and assists in maintaining kitchen work areas, and keeping equipment, utensils and food plates clean and orderly. ESSENTIAL DUTIES AND RESPONSIBILITIES (To be completed without harming or injuring the resident/patient, co-worker, self, or others): Preparation/Production Responsibilities Uses precaution with exposure to temperatures and humidity changes as a result of entering refrigerated storage areas, working at ovens, ranges, dish washing machines and at steam tables. Prepares meals, snacks, and nourishment in accordance with sanitary regulations, as well as the facility?s standards and procedures Serves food in accordance with established portion control procedures, adhering to extended menus, recipes, and specific therapeutic diets according to the preplanned menu. Serves meals that are palatable, appetizing in appearance, garnished and at proper temperature, on a timely basis, safely without harming or injuring the resident/patient, yourself, co-workers or others. Serves food from steam table and/or transport food delivery carts to the resident areas. Honors residents/patients food likes/dislikes per tray ticket within prescribed diet parameters. Ensures food supplies for the next day?s production are available. Completes preparations as required. Assists cooks in preparing meals as directed. Makes authorized substitutions to menus, snacks and nourishment. Food Safety Applies safe food handling techniques as identified in the procedures manual and state and federal codes and regulations. Uses proper hand washing techniques. Thaws food appropriately. Stores food using correct packaging and labeling. Uses gloves appropriately and changes when required. Checks refrigerators and freezers for correct temperatures. Cools, stores and reheats cooked foods according to procedures. Per MA Order In order to work in a nursing home, you must be Fully Vaccinated and boosted if you are due.
