Assistant General Manager

REPORTS TO (Title): General Manager DEPARTMENT: Operations

STATUS CLASSIFICATION: Exempt JOB CODE:

SUPERVISES: Directly accountable for the performance, management, and development of the HOH Team Members

(Par 3,4,5), Bartenders (par 3 and 4) and all Shift Managers.

JOB PURPOSE: Directly responsible for HOH execution and overall performance (and Bar in most cases). Responsible for

maintaining a safe environment, and improve bottom line profitability through appropriate expense control and revenue

management. Directly supervises and manages Shift Managers, HOH Team Members and Bartenders (in most cases). This

job is directly accountable for Kitchen operations, Food Cost of Sales and variances (and Bar in most cases). Assists the

General Manager in providing overall management guidance for the HOH.

The overall day to day focus of this job will shift based on business needs. The general guideline for where the AGM focuses

as a percentage of the work week is as follows:

Management of General Restaurant Day to Day Operations- 60%

Team Member Training and Development-15%

Kitchen Operations and Food COS (and Bar in most cases) -25%.

ESSENTIAL RESPONSIBILITIES:

Team

Trains, develops and retains Team Members

Has direct management responsibilities including Team Member performance evaluation and the right to make

recommendations regarding hiring and firing

Directly oversees and manages the performance and development of HOH Team Members (and Bartenders in most

cases)

Responsible for overseeing proper HOH Wing Certified Trainer (WCT) selection and training program execution (and

Bar in most cases)

Guest

Responsible for GLI, PGR and other Guest feedback metrics related to HOH service (and Bar in most cases)

Creates strategic plans for HOH based off GEM and PGR reports (and Bar in most cases)

Ensures proper Steps of Service are regularly taking place in HOH (and Bar in most cases)

Quality Operations

Responsible for all zone rollouts and introductions of new products, tools and services

Ensures all mandated tools are utilized and completed with integrity

Reviews and analyzes overall inventory

Responsible for creating an environment compliant to safety, cleanliness, and sanitation standards

Sales and Profits

Responsible for creation and execution of strategic sales building plan for HOH (and Bar in most cases)

Directly responsible for all Food costs and associated action plans (and Bar in most cases)

Properly follows accrual process and proactively manages purchases to keep accruals to a minimum

Supports GM with overall labor performance vs. budget

OTHER JOB DUTIES AS ASSIGNED

REQUIRED KNOWLEDGE AND SKILLS

General knowledge of labor laws, health codes, safe food handling and sanitation, responsible alcohol service,

safety and security systems and procedures, computer operations

Good people management skills, communication and listening skills. Must champion change

Manage and direct the work of other Team Members

Demonstrated time management and organizational skills

Must be self-motivated, detail oriented and have a passion for teaching others

Must be able to read and comprehend written materials, write in grammatically correct sentences, and perform

basic to intermediate mathematical computations

JOB REQUIREMENTS/EDUCATION/EXPERIENCE

Required

Education: High School or equivalent.

Meets the minimum state age requirement related to serving alcohol

Must possess proper food handlers and alcohol dispensing certifications (if required by law)

Satisfactory background check history

Must be able to work a flexible schedule including days, nights, weekends and holidays

Preferred

Minimum 3 years management experience

Bachelor's Degree

Previous FOH and HOH/Kitchen Management Experience

Coursework in restaurant management

PHYSICAL DEMANDS:

The physical demands for this position are sits, stands, bends, and moves intermittently during working hours. Must also

have the ability to regularly lift up to 50 pounds.
