We are looking for a Culinary Specialist , with the potential to develop into a Concept & Development Chef in the short term. Therefore, experience in product development on an industrial scale would be advantageous.

As Culinary Specialist / Concept & Development Chef at Nestlé Research you will be part of a Team of international Development Chefs and the Nestlé global chef network with more than 60 members contributing to create exciting culinary products in

projects for various categories and markets globally.

A Day in the Life of a Culinary Specialist (Concept & Development Chef)

  • Generate new concept ideas for future food products by leveraging the expertise of a cross-functional team and present these concepts to key stakeholders

  • Develop recipes for culinary products based on development requests, including creating flavor and texture profiles, determining costs, composing ingredient statements (in accordance with local legislation), ensuring safety, and considering packaging requirements

  • Create Food/Culinary products that cater to the local taste, texture, and appearance preferences of a specific market or region

  • Translate abstract themes, scientific findings, and new technologies and processes into tangible food and food experiences

  • Stay updated on and scout for new food trends through personal networks

  • Contribute to various creative sessions by sharing culinary knowledge and expertise

  • Teach cooking and enhance understanding of cuisine

  • Participate in all culinary lunch, dinner, and catering events, exceeding guest expectations and creating memorable food experiences

  • Continuously develop knowledge in terms of raw material expertise and industrial feasibility

  • Prepare taste-testing sessions, conduct test series, and participate in product benchmarking

  • Plan and coordinate prototyping and development activities within the project timeline

  • Document tests and tastings, and contribute to the preparation of relevant documents

What will make you successful

  • Apprenticeship as a cook or culinary degree

  • Knowledge of food in general, including various ingredients, ethnic cuisines, and regional specialties

  • 5 years of experience in the high-end hospitality/catering industry in multiple countries, preferably with experience working in an international 5-star hotel company as a Chef de cuisine or above (Executive Sous Chef, Executive Chef)

  • Previous experience in product development on an industrial scale in any food category is advantageous

  • Collaborating effectively with scientists and cross-functional project teams, approaching tasks with a proactive and solution-oriented mindset

  • Fluency in English is mandatory (written and spoken) French is a plus
