Job Purpose:

Manages and coordinates Food & Beverage activities and staff

Job Duties and Responsibilities:

  • Manage Food & Beverage activities and staff by facilitating and attending organizational and departmental meetings, creating meeting agendas, conducting venue and departmental meetings, providing pertinent information to staff, ensuring the ordering and stocking of necessary supplies and foods, preparing menus and specification books, scheduling station rotation of staff, assigning duties to staff, assessing the needs of the business and making necessary adjustments, delegating assignments to the Food & Beverage Supervisors, supervising and monitoring team member production, ensuring established policies and procedures are followed, ensuring guest service is efficient and effective, providing guidance and instruction as needed, processing voids or check corrections when necessary, ensuring server and cashier drop sheets are accurate at the end of the shift, and working off-site events as required. - 50%

  • Ensures product and labor costs are within established guidelines by setting annual productivity goals, monitoring profit and loss statements, reviewing staffing overtime needs, modifying staffing as needed, regulating food product utilization, monitoring supplies for efficient and cost effective utilization, ensuring food freshness, and ensuring food waste is kept to a minimum. - 20%

  • Promotes guest service by monitoring and ensuring guests are serviced in a professional and timely manner, proactively speaking with guests, resolving guest concerns in a professional manner, and referring complex problems to the Resort General Manager. - 15%

  • Develops team members by monitoring team member performance, mentoring Food & Beverage Supervisors, identifying on-going training needs, conducting performance appraisals, and providing counseling, guidance and corrective action as needed. - 10%

  • Maintains safe and sanitary dining room by monitoring sanitation duties of staff, ensuring daily cleaning tasks are completed, ensuring all work areas are clean, completing weekly inspection sheets, ensuring equipment is working efficiently, and ensuring team members comply with health and safety rules. - 5%

Job Specifications:

Education and Experience:

Essential:

  • High School Diploma or G.E.D.

  • Current Food Handler card

  • 5 years food service experience

  • 2 years customer service experience

  • 1 year supervisory experience

Desirable:

  • Completion of Sycuan's Supervisory Certificate Program

  • Serve safe certified

  • Fine dining or steak house experience

Skills and Knowledge:

Essential:

  • Ability to create recipes and menus

  • Ability to work various shifts

  • Ability to communicate effectively with guests and team members

  • Ability to provide leadership and guidance to staff

  • Ability to prioritize and perform multiple tasks and assignments

  • Ability to work multiple venues during the shift

  • Working knowledge of MS Word and Excel

  • Ability to maintain professionalism and composure

  • Ability to understand and follow verbal directives and written directions

  • Ability to accept constructive criticism

  • Ability to communicate effectively in the English language

  • Ability to routinely lift and carry up to 50 lbs

  • Ability to stand and walk for up to eight hours at a time

  • Ability to bend, stoop, push and pull
