Responsibilities

Prepare all food in sufficient quantities, according to written recipes, production sheets and menus Handle food in accordance with sanitary standards Sample food items for each meal and assure high quality products Prevent food waste Help rotate and put away stock Directly responsible for the care and cleanliness of equipment in cooks immediate area Follow dietary policies with reference to washable apparel, hairnets, clean cut nails, etc Take daily food temperatures and complete mock trays when scheduled Take temperatures of walk-in cooler, freezer and side by side refrigerator daily Identify and date leftover food Rotate and use leftovers skillfully Prepare steam table and provides all items listed on the menu with proper serving utensils. Participates in set up of special buffets, parties, etc. Assist with development and implementation of departmental goals, policies, and procedures Provide back up coverage for the department head and the dietary staff as needed Supervises all dietary aides Follow sanitation and safety guidelines when storing stock Follow all sanitation and safety policies and procedures Performs any and all other duties as assigned by the Director of Food and Nutritional Services

Requirements

Ability to lift items weighing 10 or more pounds Weekend and Holiday availability is required
