MITCHELL COUNTY NURSING AND REHABILITATION

Position Summary:

Prepare nutritional food for residents and visitors according menu and menu guides; monitor methods of food handling, preparation, meal service and equipment cleaning. Suggest menu items and assist in the requisition of food and supplies.

Qualifications:

  • Education: High school graduate or equivalent is preferred.
  • Minimum one year food service experience in a health care dietary setting preferred.
  • Have general knowledge of quantity food preparation and portioned servings. Verbal and writing ability necessary to communicate and work effectively with various levels of staff, residents, and the public.
  • Numerical ability necessary to make various computations in keeping work records, and in recipe preparation.
  • Willingness to perform routine, repetitive tasks with frequent interruptions. An appreciation of food value and dietary equipment and an awareness of the requirement of careful handling and serving.

``` - Ability to read, understand, and follow recipe directions, diet orders and work assignments. Able and willing to work flexible hours such as during and emergency situation. Must be patient and tolerant toward staff, residents, and public. - Motor coordination and manual dexterity are required to prepare and operate dietary equipment.

Duties, Responsibilities, and Skills:

  1. Coordinate food preparation and meal service.
  2. Plan initiate cooking schedule and serve for assigned meal: ensure appropriate portioned serving according to portion control standards.
  3. Prepare nutritional snacks for residents as directed by the Dietary Supervisor.
  4. Taste and smell prepared food to determine quality and palatability.
  5. Monitor and document temperature of hot and cold foods through food preparation and service to ensure that established temperature goals are met and maintained throughout meal services.
  6. Determine the amount of food, supplies as required for daily menus.
  7. Notify Dietary supervisor of food, supplies or equipment needs, report equipment malfunctions, and unsafe conditions to supervisor.
  8. Clean equipment and work areas assigned.
  9. Be knowledgeable of Federal, State, and department rules, regulations, policies and procedures.
  10. Wear protective clothing at all times while in the kitchen and dining room areas.
  11. Attend in-service educational programs.
  12. Follow defined safety codes while performing all duties.
  13. Preform other duties as assigned by supervisor/manager.

Other Significant Requirements:

  1. Maintain HIPAA required and all other confidentiality while working with confidential matters on a daily basis.
  2. Follow all policies and procedures set forth by Mitchell County Hospital District.
  3. Provides services directly to residents while maintaining a positive resident relations atmosphere.
  4. Follows aseptic procedures and precautions when involved in direct resident contact or handling potentially infectious materials.
