Sous Chef

What you will be doing:
Reporting to the Chef de Cuisine or Senior Chefs, responsibilities and essential job functions include but are not limited to the following:
Consistently offer professional, friendly and proactive guest service while supporting fellow colleagues
Ensure the consistency in the preparation of all food items according to hotel recipes and standards
Conduct daily shift briefings to kitchen colleagues
Ensure all kitchen colleagues are aware of standards & expectations
Liaise daily with venue Managers to keep open lines of communication regarding guest feedback Maintain and enhance the food products through creative menu development and presentation
Have full knowledge of all menu items
Balance operational, administrative and colleague needs
Ensure proper staffing and scheduling in accordance to productivity guidelines
Ensure the cleanliness and maintenance of all work areas, utensils, and equipment are in working order
Follow kitchen policies, procedures and service standards
Monitors all safety and sanitation policies when handling food and beverage
Coach and mentor culinary colleagues on trends, cooking methodologies, leadership
Input orders through Birchstreet system to ensure proper food levels are maintains
Assist in correction disciplinary action forms and documentations as needed
Assign daily workloads to achieve maximum labor and productivity efficiencies
Adhere to menu engineering program
Completes daily temperature log books and insures FIFO of all received items
Adhere to and follow ALLSAFE health and safety protocols, ensure all colleagues are trained and held accountable for the set standard
Place work orders for items needing repair
Other duties as assigned
Qualifications
Required experience:
- Red Seal Journeyperson Cook Certification or international equivalency
Or
- Completion of Rouxbe Culinary Foundations level 1 & 2. Receiving certification in both with a grade greater than 90% and 54 months (7,020 hours) experience in relevant workplaces
Your experience and skills include:
3-4 year’s culinary supervisory/leadership experience preferably in a luxury setting or large kitchen environment
Red Seal Certificate (Journeyperson’s papers) or recognized international equivalent required
Safe Food Handling Certification required
Creative, forward thinking
Proven organizational and coaching skills
Strong Skills in visual presentation of food, with a familiarity with contemporary serving styles; Attention to detail, accuracy and consistency with recipes and plating
Ability to work cohesively with fellow colleagues as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
Proficient in Microsoft windows applications word, excel, and powerpoint
Able to lift, carry and pull up to 50lbs and able to constantly stand and walk throughout shift
Able to withstand exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezers
